This specific recipe isn't a traditional Thai preparation per se, but one that was unique to a single vendor that was discovered by Chef Addy Ricker while at the Chiang Mai Temple in the Thai highlands of Northern Thailand. The corn is traditionally brushed with a mixture of coconut cream, sugar, salt, and pandan leaf, which imparts a subtle sweetness and aromatic flavor.
